Apple Danish Recipe

This Apple Danish recipe was created for those following the Ideal Protein protocol but can be enjoyed by anyone on a ketogenic weight loss program.

This Apple Danish recipe was created for those following the Ideal Protein protocol but can be enjoyed by anyone on a low-carb or ketogenic weight loss program.

Ingredients:

2 packets Ideal Protein apple oatmeal

2 eggs (reduce dinner protein by 1.5 ounces for each egg)

1 tsp baking powder

2 tsp swerve or stevia

½ tsp cinnamon

½ cup -1 cup grated zucchini (let it sit a few minutes and then squeeze out excess water)

2 tbsp Walden Farms Apple Butter

Note: Peeling the zucchini first gives this more of an authentic Danish look (less green bits)

Instructions:

Beat eggs in a glass bowl or measuring cup

Add the rest of ingredients except Apple Butter and use a spatula to combine until mixed

Divide evenly among a 6 count whoopie pan or just use a muffin tin but 1/3 full,  flatten the batter. Very very lightly oil the pan so you can get them out!

Using a spoon, make a small well or indentation in the middle of each one.

Bake at 350 for 10 minutes.

Before eating, fill each depression with 1 teaspoon apple butter. If like me you used a muffin tin and had no depression after baking, worry not, cut in half and put your apple butter in there!
