Ingredients
- 1 lb shrimp, peeled and deveined
- 2 cloves garlic, grated
- Pinch saffron, bloomed in 1 tbsp hot water
- Juice and zest of 1 lime
- 1 tbsp olive oil
- 1 tsp Ideal Protein Maple Flavoured Syrup
- Salt and pepper
- 2 zucchini, ribboned*** see more detail below
Instructions
- Combine shrimp, garlic, saffron water, lime juice and zest, olive oil, Ideal Protein maple flavoured syrup, salt, and pepper. Marinate 15minutes.
- Thread shrimp onto skewers.
- Grill over high heat, 2 minutes per side, until just opaque and lightly charred.
- Toss zucchini ribbons with salt and a squeeze of lime.
- Serve skewers over the ribboned zucchini

How to Ribbon Zucchini (and Enjoy It Raw)
To ribbon it, just take a vegetable peeler (or a mandoline if you have one) and run it lengthwise down a zucchini, turning it slowly as you go. Each pass gives you a long, thin ribbon. Keep going until you reach the seedy core, which you can save for soup or compost.
Eating it raw keeps all the enzymes and nutrients intact, nothing lost to heat. The ribbons have a light, delicate texture that soaks up whatever you dress them with. A little olive oil, lemon juice, and salt is all it takes to soften them slightly and bring out their flavour. From there, toss in some fresh herbs, a sprinkle of nuts or seeds, or a shaving of parmesan, and you’ve got a simple, beautiful salad that feels good going in. *adding more oil and seeds is for Phase 2 and 3 of the Ideal Protein Protocol.
