Buffalo Chicken Meatballs with Air Fryer Cauliflower

Ingredients

Meatballs

• 1 stalk celery, minced

• ½ tsp onion powder

• 1 tsp hot mustard

• 1/8 tsp salt

• 1 portion ground chicken

Cauliflower

• 2 cups cauliflower florets

• ½ tsp oregano

• ¼ tsp garlic powder

• ¼ tsp ground black pepper

• 1/8 tsp salt

• Cooking oil spray

• 2 tbsp vinegar based hot sauce, or just enough to your spice tolerance

• Greens of one green onion sliced for garnish

Instructions

Preheat air fryer to 400F. Mix meatball ingredients together and form into 6 balls. Toss cauliflower with oregano, garlic powder, black pepper and salt. Spray meatballs and cauliflower with cooking oil spray. Air fry for 7 minutes. Carefully turn meatballs and cauliflower. Air fry for 5-10 more minutes or until meatballs are 165F and cauliflower are charred. Toss meatballs with hot sauce. Garnish with green onion. Serve.

You can also roast in an oven at 400 and if you have convection use the convection setting to 375.
