Eggplant and Shrimp Smoke Show

This recipe is a little more complex but it’s not hard. The flavours will be a delight. And a great way to get some variety on Phase 1 of the Ideal Protein protocol.

Recipe Details

  • Servings: 2 (Phase 1, 2 and 3)
  • Total Time: a few minutes

Ingredients

  • 1 large eggplant charred whole on BBQ – cool then peel and chop
  • 1 garlic clove finely chopped
  • 1 tomato grated
  • 1 tsp olive oi
  • 1 egg, lightly beaten
  • turmeric to taste
  • 1/4 tsp salt
  • Pepper to taste
  • Shrimp 6-8 Large Jumbo Shrimp/Prawns
  • 2 tsp olive oil
  • 1 clove garlic chopped
  • 1 pinch saffron
  • Lemon Zest from 1 lemon
  • salt and pepper to taste

Instructions

  • Start by marinating the shrimp in olive oil, garlic, saffron, lemon zest, salt and pepper for 15 minutes
  • Cook garlic and turmeric in olive oil, add tomato and cook to reduce
  • Add chopped eggplant, simmer, then add egg until just set. About 1-2 minutes. Stir until well combined.
  • Grill the shrimp 2 -3 minutes each side on BBQ or stove top
  • Place shrimp on top of the tomato eggplant mixture.
  • Add some cilantro or parsley or fresh chives, a squeeze of fresh lemon if you’d like!
  • Enjoy!
