Zucchini Maple Oatmeal Protein Muffins

Easy protein for breakfast and some veggies.

IDEAL PROTEIN PHASE 1, 2 & 3 | SERVING: 4 MUFFINS | TIME: 25 MIN

Protein packed muffins. Made with the Ideal Protein Maple Oatmeal Package. This recipe is great for everyone on the Ideal Protein ketogenic protocol.

Ingredients:

1 package Ideal Protein Maple Oatmeal Mix (dry)

1/2 cup grated zucchini – squeeze out excess water (squeeze hard)

1 whole egg (reduce dinner protein by 2 oz)

1-2 tbsp IP Maple Syrup (I like 1 tbsp but 2 is sweeter and a bit more gooey) or 1 tbsp Monk Fruit Sweetener

1 tsp baking powder

1/2 tsp vanilla

A dash of cinnamon

Instructions:

Preheat oven to 350 degrees.

Mix all ingredients in a bowl until a dough forms.

Scoop into 4 muffin tins. Silicone tins or very lightly oiled muffin tin.

Bake for about 8-12 minutes.

If you overcook these they get dry. Brew a cup of tea. Sit down and enjoy.
