Simple Fennel Arugula Salad Recipe

Have your taste buds explode with this fabulous salad.
1/2 cup fennel thinly sliced
1-2 cups arugula
1/4 cup radishes thinly sliced
1/2 lemon – a bit of grated rind and squeezed
2 tsp olive oil
1/2 tsp crushed garlic
salt and pepper
Phase 3 – add a little bit of freshly grated Romano Cheese
This is all about thinly sliced fennel and radishes. A mandolin is sure nice or this step or a sharp knife.
In a little bowl whisk the oil, lemon juice, garlic.
Toss arugula, radishes and fennel. Add the dressing, add salt and pepper to taste.
Delicious as is but a little bit of grated Romano cheese in Phase 3 is quite nice too.
