Looking for the perfect all-around flavourful spread? This protein-packed, quick and easy tofu, “cheese”, garlic, and herb spread is your answer! Enjoy it as a dip with your favourite veggies!
1 package of soft Tofu
1/4 jalapeño (more if you like it spicy)
1 clove of garlic 2 tbsp fresh chopped cilantro, parsley or basil
1/2 juice of a lemon
1 tbsp of water
Salt & pepper
Using some soft Tofu, weigh out the number of ounces you wish to use adding to your blender bullet (you can split your protein so that you can use half your protein amount at lunch and the other half of your protein allowance at dinner)
Add finely chopped jalapeño and garlic, some fresh cilantro or basil, salt, pepper and lemon juice (1/2 a lemon or less)
Blend all ingredients together until it appears like a cream cheese like spread.
Place in a decorative bowl and spread on your IP crisps or cucumber slices and enjoy.
This can also be used as a dressing for salad but remember the Tofu counts as protein.
You can also make this into something for a ‘cheese and veggie platter’ – make it decorative for a sharing plate and add hard boiled eggs and celery sticks along with your bowl of tofu soft cheese garlic, herb and jalapeño dip.
If making this a whole dinner meal I measure my protein but use a mix of proteins. For example, some soft tofu cream cheese, hard-boiled egg, smoked salmon or smoked salmon mouse, plenty of veggies for dipping too.
