Broccoli Salad Recipe

IDEAL PROTEIN PHASE 1, 2 & 3 | SERVING: SINGLE (1 PERSON) | COOK TIME: 20 MIN (TOTAL TIME: 1 HOUR 2 MIN)

Ingredients:

2 cups broccoli cut into bite-size florets

2 tbsp apple cider vinegar

2 tsp extra virgin olive oil

1 large garlic clove, minced

1/2 tsp cumin seeds

1 pinch crushed red pepper flakes

Ideal Protein Salt (1/4 tsp per day) – to taste

Instructions:

First, in a large bowl, stir vinegar and salt. Add broccoli and toss to mix. Second, in a large skillet, heat 1 tsp olive oil until hot, but not smoking. Add garlic and cumin and cook until fragrant, about 1 minute. Next, stir in remaining oil and pepper flakes. Pour mixture over broccoli and toss well. Let sit for at least 1 hour at room temperature, and up to 48 hours (chill it if you want to keep it for more than 2 hours) adjust seasonings (it may need more salt) and serve.

Great to bring to work and enjoy with a bag of Ideal Protein Crisps or Dorados.
