With this phase 1, Ideal Protein, Apple Rhubarb Crisp recipe, you can celebrate this season knowing you’re in control and maintaining your diet.

Ingredients:

1 packet Ideal Protein Apple Flavoured Oatmeal

2 cups frozen rhubarb – chopped

1 tsp cinnamon

1 tsp vanilla extract

1 tsp Stevia powder (more to taste)

1 oz. water

Pinch of sea salt

Instructions:

Preheat oven to 400°F. Grease a mini pie dish.

Place a medium sized pot over medium heat. Add rhubarb and cook until tender, stirring frequently

Add cinnamon, vanilla, and salt. Stir.

When done cooking, add stevia and stir, ensuring it mixes in and dissolves completely. Taste and adjust with more stevia if needed.

Spoon rhubarb compote into pie dish.

Mix apple oatmeal with 1 oz. of water and stir with a fork until moist. Do not over mix.

Crumble over compote. 

Bake 20 – 30 minutes until it bubbles. Allow to sit for 10 minutes.

Serve warm and enjoy!
