Mockamole

This mockamole recipe is the perfect low carb, low fat, guacamole alternative. It’s delicious and Ideal Protein Phase 1 friendly!

This Mockamole, Ideal Protein recipe is inspired by Janveva’s Ideal Recipes Cookbook, available on our client online ordering site.

Ingredients:

2 cups asparagus, chopped

1 tsp garlic, chopped

1/4 cup cilantro, parsley or chive (or a combination)

1 tbsp red onion, chopped

1 tbsp lime juice

1/4 tsp cumin powder (optional)

dash of hot sauce

salt and pepper, to taste

Instructions:

Steam the chopped asparagus for about 10 minutes.

Then using a small food processor blend with garlic, onion, lime juice, some hot sauce (or chilli if you like it hot!), fresh cilantro and cumin (if using).

Blend and add a little water to get the desired texture.

Add salt and pepper – you know how you like your guac!

Present this in a nice dish or bowl for the table, salsa goes well here obviously but ensure it’s fresh salsa (no cooked onions). Eat as a dip with some Ideal Protein Nachos or a side on some steamed fish. Saturday night treat!
