Creole Tomato Soup

This ideal protein recipe is phase one approved. Warm your belly up with this classic.

IDEAL PROTEIN PHASE 1 | SERVINGS: 2 | TOTAL TIME: 20 MIN

Ingredients:

2 cups chicken broth

1 cup diced bell pepper

1 cup diced eggplant

1 cup thawed frozen sliced okra – or frehs cut into 1/2 inch slices

1 cup peeled diced turnip

1/4 tsp salt

1 packed Ideal Protein Tomato Basil Soup Mix

1 packed Ideal Protein Chicken Noodle Soup Mix

1/2 tsp Creole or Cajun spice blend, to tasate

2 tablespoons chopped parsley

Instructions:

Combine the broth, bell pepper, eggplant, okra, turnip and salt in a medium saucepan. Bring to a boil over high heat, lower the heat and simmer until the vegetables are just tender about 6 minutes.

Meanwhile, prepare the tomato and chicken noodle soup mixes according to packet directions, making sur to heat them just until warm (not boiling).

Remove the vegetable mixture from the heat and let it sit for 2 minutes. Stir in the tomato and chicken noodle soups and the spice blend. Ladle the soup into bowls and garnish with parsley.

Feel free to use whatever blend of select vegetables strikes your fancy. Fennel, leeks, collards, mushrooms, spinach are all excellent choices.
