Coriander-Coated Pork with Bok Choy and Radish Recipe

Ingredients:

6 ounces sliced pork tenderloin, pounded to 3/4 inch thick

1 teaspoon toasted coriander seed, crushed

1/4 teaspoon salt

1/8 teaspoon coarsely ground black pepper

1 teaspoon olive oil

1/4 cup chicken broth

1/4 cup chopped leek or green onion

1 3/4 cups chopped bok choy, or 2 to 3 baby bok choy, halved

2 tablespoons sliced or chopped radish

Instructions:

Sprinkle both sides of the pork with coriander, salt, and pepper.

Heat the oil in a medium nonstick skillet over medium heat.

Add the pork and cook until golden brown and cooked through, about four minutes on each side. Transfer the pork to a plate; keep warm.

Add the broth to the skillet; stir in the leek ad bok choy and bring to a boil.

Reduce the heat and simmer, uncovered, stirring occasionally, until the vegetables are just tender, about 3 minutes.

Stir in the radish and cook 1 minute longer. Serve the vegetables with the pork. Slice the pork on the diagonal before serving if you like.
