This recipe was created by Chef Penny Davidi – follow her on instagram she is a long time fan and follower of the Ideal Protein Protocol. It can be made ahead of time and used for lunch. It’s refreshing full of veggies and if you want to adjust it for Phase 2 or 3 go ahead and add some pine nuts or feta cheese or olives. Our three phase protocol is nourishing and healthy. If you have some fresh herbs on hand I’d add in some chives, fresh rosemary or basil for extra flavour too.
Being on a diet does not mean bland food. Remember taste buds readjust in weeks and you will be savouring whole foods like never before. Learning to add a few fresh herbs and working with food that is in season will give you amazing flavour. You don’t have to work as hard to make yummy food when you work with fresh in season foods.

Remember phase 1 recipes will become your foundation in phase 2 as you move into stabilization.

• 1 packet Ideal Protein rotini
• 2 cups spinach
• 1/4 cup cucumbers, cubed
• 1/4 cup yellow squash, cubed (or shredded zucchini if no yellow squash)
• 1/2 cup button mushrooms, sliced
• 1/4 cup red onion, chopped
• 1/4 cup green pepper, cubed
• 1/4 cup sliced radishes, sliced
• 2 tsp olive oil
• 2 tbps apple cider vinegar
• 1 tsp dijon mustard (personally I like more)
S salt and pepper, to taste
Bring 2 cups of water to a boil (no salt or oil needed). Add IP Rotini packet to the water and boil for 10 minutes.
Meanwhile, whisk the dressing ingredients together in a bowl large enough to mix your salad ingredients. Set aside.
Add the cooked pasta to the bowl with dressing. Dice and chop your vegetables to your liking and add to your salad bowl. Toss vegetables, rotini, and dressing together until fully dressed. Add salt and pepper to taste.
Serve the pasta salad over a bed of spinach and enjoy.
You can add a fresh glass of water with a lime wedge. And how about making sure you are sitting down, a short moment to give thanks for the food and slowing down to enjoy the flavours of your creation.
